THE VINEYARD
The vineyard where our Sauvignon Blanc grows is located in the PGI wine region of Epanomi, on slightly elevated, sloped hills about 1km from the coastline of the Aegean Sea. It encompasses 1.25ha of plantation located on a southeast facing slope with view on the Mediterranean Sea and Mount Olympus. The location of this particular peninsula provides excellent conditions for dry, full bodied white wines. The constantly changing temperatures combined with the close mountain ranges to the north and west, generate winds from various directions, as well as favourable, daily temperature fluctuations.
THE VINTAGE
The year 2015 was with ever changing weather. Enormous rains in spring followed by a dry, windy, but not too hot summer. We decided on an early harvest to preserve some acidity and freshness for this vintage.
THE WINEMAKING
The harvested grapes were processed immediately, and the Sauvignon was destemmed, cooled down and pressed. Fermentation took place at temperatures of 12 – 13°C, resulting in a long, steady and quiet process, producing intense, complex, yet smooth and round aromas. After fermentation the Sauvignon is kept for three months on lees to extract complex aromas and four more months to achieve natural stabilisation.
TONGUE, NOSE, EYES
A fresh and fruity bouquet presenting citrus, passion fruit and freshly cut grass. Flavours of lemon, lime and honeydew melon are followed by a crisp finish with good length. It is an ideal partner for oysters, clams, chicken and white pasta dishes.
