Domaine Florian is a boutique, family-run winery where gastronomy is at the heart of the guest experience.
Our cuisine is rooted in European tradition — with a strong German & Austrian influence, clean flavors, seasonality, and respect for ingredients.

Our open kitchen is part of our identity, and we are now looking for a Head Chef who brings structure, confidence, and pride to the role — someone who wants to build a serious kitchen, not just run one.

We are not a trend-driven restaurant.
We are building a timeless wine & food destination.



Who We’re Looking For

We are looking for a chef who understands discipline, execution, and simplicity done properly.

You are:
• A natural leader who can organise, train, and elevate a small kitchen team
• A chef with a strong foundation in European cuisine (German / Austrian experience is a major plus)
• Structured, tidy, calm, and clean — especially in an open-kitchen environment
• Confident in creating menus that match wine, not fight it
• Reliable, emotionally stable, and focused on consistency and quality
• Someone who sees the kitchen as a craft, not just a job



Your Responsibilities

• Create and cost seasonal, permanent, and event menus
• Develop dishes with a clear Central European identity and modern elegance
• Lead daily prep and evening service with calm authority
• Train and organise kitchen staff
• Maintain HACCP, hygiene, and allergen standards
• Manage stock, suppliers, and quality control
• Build systems for prep, service, and ordering
• Keep the kitchen clean, structured, and guest-ready at all times



Working Hours

• Full-time position — 40 hours per week
• Prep days: Tuesday & Wednesday (daytime)
• Service days: Thursday, Friday, Saturday (evening service)
• Sundays off (except occasional events)



Compensation & Benefits

Monthly Gross Salary: €1,647.20
This already includes the legally required compensation for:
• Evening / night work
• Sunday work
• Public holiday premiums
(as long as weekly hours remain within the legal 40-hour framework)
